Pork Sausage "Nicoise" with Mozzarella

This salad is so versatile – try leftover roast chicken or sliced griddled steak instead of sausages.

Instructions

Step 1
Preheat the stove top to high. Boil the potatoes in salted water for 15 minutes, add the beans and cook for 5 minutes until tender. Drain both, cover with cold water, then drain again.
Step 2
Meanwhile, grill the sausages for 15-20 minutes, turning regularly, until golden and cooked through.
Step 3
Whisk the mustard, honey and seasoning with a fork, whisk in the vinegar, then the oil.
Step 4
Slice the potatoes and sausages into bite size pieces and put on a large platter with the beans, tomatoes, red onion and salad leaves. Place broken pieces of Mozzarella over the top of your salad. Pour over the dressing and serve
