Instructions
Step 1
Dice, tomatoes, cucumber and spring onion.
Step 2
Blend all ingredients in a bowl with cottage cheese, add seasoning
Step 3
Toast the crumpet- I used sourdough crumpets but any will do.
Step 4
Place crumpet on a plate and top with cottage cheese mixture. Enjoy...
