360mlwater
400gmussels
1sweet potato
diced
0.5lotus root
diced
½ cupcarrot
diced
2shiitake mushrooms
diced
Leek sauce
Instructions
Rice
Step 1
Soak rice for 30 minutes and chopped lotus root for 30 minutes. You won't need too much water, because there will be water coming from the mussels. Think of it of a 1:0.9 ratio.
Step 2
Chop sweet potatoes, carrots, shiitake mushrooms, and lotus root.
Step 3
Put the rice soaked in a rice cooker in the order of sweet potatoes -> lotus root → carrots → shiitake mushrooms.
Step 4
Place mussels on top. Cook the rice.
Leek sauce
Step 5
Chop leek, green onion, and cheongyang pepper.
Step 6
Pour in soy sauce, brown sugar, garlic, gochugaru, sesame oil and sesame seeds together.
Step 7
Put rice in a bowl. Serve with leek sauce! Enjoy!
