Veggie ceviche tostadas✨ . For the Ceviche:▪️1/2 Cup Jicama, diced small▪️1/4 Cup Red Onion, diced small▪️1/2 of a Serrano Pepper, diced small ▪️1 Avocado, diced small▪️1/2 Cup Red Bell Pepper, diced small▪️1/2 Cup Frozen Corn, thawed▪️1/4 Cup Cilantro, minced▪️ . For the Dressing:▪️3 Limes▪️3 Tbsp Olive Oil▪️1/4 tsp Salt▪️1/4 tsp Pepper▪️1 Clove Garlic, grated▪️ . For the Tostadas: ▪️2 Tbsp Avocado Oil▪️6 Corn Tortillas▪️Kosher Salt▪️2 Tbsp Cotija Cheese▪️ . 🌱Vegan Modification: Leave out the cheese . 1️⃣ Preheat oven to 400°F (convection if you have it) and drizzle 2 Tbsp avocado oil on a baking sheet 2️⃣ Coat tortillas in oil on both sides, sprinkle with some salt, and bake for 7 minutes on the first side, flip and bake for 3-4 more minutes until golden brown and crispy (if you are not using convection you may have to cook a bit longer) 3️⃣ Mix together the ingredients for the dressing and set aside 4️⃣ Place ingredients for the ceviche in a bowl and pour the dressing on top; mix to evenly coat the veggies and serve on top of the tostadas with 1 tsp cotija cheese sprinkled on each one - enjoy! . ⏲25 minute total prep + cook time . Recipe makes 6 tostadas (serves 2-3 people as an appetizer or side dish)
