INGREDIENTS:
- 300mL The Complete Dairy High Protein Light Milk
- 1.2tsp Coles Lemon Juice
- 300g Coles Corn flour
- 100g Coles Perform Chocolate Whey Protein Powder
- 2 eggs
- 100g Marco Cacao Powder
- 1.8tsp Wards MacKenzie’s Baking Powder
- 75mL La Espanola Light Olive Oil
- 2.4tsp Queen Organic Vanilla Extract
- 0.6tsp Salt

Instructions
Step 1
Step 1: Preheat the oven to 180°C (350°F). Line a 12-hole muffin tray with 12 paper liners – the recipe makes 12 muffins. Lightly spray oil on the paper to prevent the muffins from sticking to them.

Step 2: In a large mixing bowl, whisk milk, eggs and lemon juice.





Step 3
Step 3: In the bowl with the milk, eggs and lemon juice, stir in chocolate chips, olive oil and vanilla extract.

Step 4: In another bowl, stir all the dry ingredients: flour, protein powder, cacao powder, baking powder and salt.







Step 5
Step 5: Stir the dry ingredients into the wet ingredients in three additions, to avoid lumps. Stir well between each addition. The batter should be mostly liquid and smooth with no lumps.













Step 6
Step 6: Fill each liner ¾ full, with the batter.
Step 7
Step 7: Bake on the center rack of the oven, for 20 minutes or until a toothpick comes out clean.


Step 8
Step 8: Place muffins on a cooling rack and wait until cool to eat.
