Step 1
In a stand mixer with the whisk attachment, mix flour, salt, eggs, milk, melted butter, and vanilla extract on high for 1 minute. (You want your batter to be very thin. If it is thick like regular pancake batter, add more milk. Different milks can be thinner or thicker than others.) Let the batter sit for 5 minutes.
Step 2
While the batter rests, prepare the filling. In a mixing bowl, stir the ricotta and honey together until combined.
Step 3
Heat a small nonstick frying pan on medium. Spray with olive oil cooking spray. Scoop a small ladle-full of batter onto the center of the pan. Quickly pick the pan up, and swirl it around to spread the batter in a thin circle. (If your pancake is too thick, pour less batter in for the next pancake.)
Step 4
Set the pan on the burner, and cook for about 1 minute, or until golden brown. Flip with a spatula, and brown the other side.
Step 5
Remove from the pan, and place on a plate. Start another pancake.
Step 6
Between pancake batches, spoon a large dollop of filling in the center of each pancake. Wrap, one at a time, into palm-sized squares.
Step 7
Serve these Belarussian Honey Ricotta Stuffed Blini with a drizzle of local honey!
