Instructions
Step 1
Place a non-stick pan on high heat
Step 2
Add 1/2 cup water, eggplant, cover and let cook for 5 mins
Step 3
Add chilli garlic sauce, soy sauce, maple syrup, 1/2 cup water, cover and cook for 4 mins
Step 4
Add paprika, garlic and onions, mix and cook for 2 mins
Step 5
Add 1/2 tsp cornstarch to 1/2 cup cold water and stir until dissolved
Step 6
Add corn starch slurry to pan, remove from heat and mix until sauce thickens
Step 7
Add green onions and mix/ toss
