Instructions
Step 1
In a bowl, whisk 2 eggs and cook on a buttered pan on medium high heat for 2 minutes
Step 2
Place tortilla on the eggs and flip it so that the tortilla can warm up
Step 3
Remove from pan and then with a knife or pizza cutter, make a slit from one edge up until the centre, not all the way through
Step 4
You now have 4 corners. Place the avocado on one corner, cheese on the other, then prosciutto and lastly spinach
Step 5
Fold it up and enjoy
