Step 1
Combine spinach and kefir in a blender and blitz until smooth.
Step 2
In a bowl whisk together kefir, salt and sugar, add spinach mixture and whisk again. Then add flour and baking soda and mix well until combined.
Step 3
Heat a nonstick skillet over medium. Brush it with olive oil.
Step 4
Place about 2tbsp of batter on a skillet and cook until the surface of the pancakes have some bubbles(about 2 minutes ) flip and cook until ready.
Step 5
Serve with your favourite sauce(sweet or savoury) and enjoy!
