Instructions
Prep:
Step 1
Lemongrass / Kaffir Leaves / Ginger / Garlic / Mushrooms - Prep as directed. Combine lemongrass, ginger, and garlic in one container. Store mushrooms separately. (Can be done up to 1 day ahead)
Step 2
Chicken - Chop into bite-sized pieces. If prepping ahead of time, toss with a tsp of fish sauce and tsp of brown sugar. (Can be done 1 day ahead)
Step 3
Tomatoes - Prep as directed.
Step 4
Jalapenos / Cilantro / Limes - Prep as directed.
Make:
Step 5
Heat a Dutch oven over medium-high heat. Add oil and then lemongrass, ginger, and garlic. Saute until fragrant, ~1 minute.
Step 6
Add chicken to aromatics and saute until golden, 6-10 minutes.
Step 7
Fold in mushrooms and saute for another 6-10 minutes until mushrooms start to turn golden.
Step 8
Pour in coconut milk, stock, kaffir leaves, and (if chicken was prepped ahead of time) second parts of fish sauce and brown sugar. Otherwise add all the parts now. Cover and bring to a boil and then simmer uncovered for at least 10 min, but can be left for 25 min. Longer might overcook the chicken, but develops even more flavor.
Step 9
Season with hot sauce and more fish sauce if it’s not savory / salty enough. Add thin tomato slices at the last 30 sec of cooking. Remove lemongrass stalks and kaffir leaves before serving.
Step 10
Divide into bowls and serve with jalapenos, cilantro, and lime wedges.
