Instructions
Step 1
Saute onions until softened
Step 2
Brown meat then turn off heat
Step 3
Add garlic and stir briefly
Step 4
Add all other vegetables, the kidney beans and tins of tomato and mix well
Step 5
Add chilli (but not smoked) and herbs
Step 6
Check mixture is very wet (but doesn't need a lot of standing water)
Step 7
Pressure cook for 40 minutes
Step 8
Depressurize and check meat is tender.
Step 9
Add chipotle, extra chilli and more herbs to taste.
Step 10
Add gravy thickening and saute as required.
