Instructions

Step 1
In a skillet or pan over medium-high heat, heat one tablespoon of olive oil,. Add red onions and garlic and cook for 2-3 minutes, until onions are translucent.
Step 2
Add the ground beef and spices. Continuously mash using a spatula to make sure the beef is broken up. Once the beef is all ground up and almost cooked, add the tomato sauce and cilantro. Bring to a simmer on lowest heat for 5 minutes.
Step 3
Bring heat back up to medium. Make 5 wells in the ground beef mixture and drop 1 egg in each well. Allow to cook for 8 to 9 minutes - just until the whites are cooked and the yolk is still runny but set.
Step 4
Garnish with fresh cilantro and serve with bread, cheese, and potatoes for the ultimate breakfast spread.
