Instructions
Step 1
Pour all the beans into a strainer and rinse out. Then put in a separate bowl and leave aside.
Step 2
Mince the cloves of garlic and set aside. Then cut onions thin and lengthwise. Should be in similar shape to beans and out aside when done.
Step 3
Add oil to pan and turn on heat to medium for around 1 minute. Then add jeera and let it cook till the jeera starts crackling (should be around 30 s)
Step 4

After jeera starts cracking, add in onions and garlic. Sautee them till they are translucent but not browned.
Step 5

Add in turmeric, mix briefly, then add beans and drain water before adding. Lightly stir everything uncovered.
Step 6
Add salt, coriander, pepper, and garam masala. Mix lightly with everything. Let cook in heat for 5-7 min to let water evaporate off. visually verify that water is mostly gone. IF the spices don't seem fully mixed, cover and cook the pan two minutes, then uncover and let cook the rest
Step 7
Turn off heat, squeeze lemon, then mix lightly. Subzi is complete.
