Instructions

Step 1
Cook the quinoa and let cool for 30 minutes
Step 2
Coarsely mash the avocado, then stir in the salt , lime juice , cilantro and onion. Mix well.
Step 3
Add tomatoes, black beans and quinoa, stir until incorporated
Step 4
Serve on leaves or in lettuce cups , top with more oil, hot sauce or more garlic
