Ingredients
8 servings

½ cupbrown rice

400gtin adzuki beans
drained

400gtin red kidney beans
drained and pureed in blender

1red onion

1red pepper
or green

coriander

2garlic cloves

2 tspground coriander

2 tspcumin seeds

1chicken breast
cooked or leftover roast chicken

140gsweetcorn tinned
or frozen

200mlpassata
or tin chopped tomatoes

100gcheddar cheese

200mllow fat sour cream

8flour tortillas

3 Tbspolive oil

Instructions
Sauce
Step 1
Mix ingredients and set aside
Filling
Step 2
Heat 2tbsp oil in pan and fry onions. Add peppers and chopped chilli chopped coriander stalks and garlic and fry until soft
Step 3
Stir in coriander and cumin seads and fry another minute.
Step 4
Stir in the passata, cooked chicken, beans, sweetcorn, cooked rice and coriander leaves.
Assemble
Step 5
Lay tortillas on a board and divide chicken mixture between them. Fold in ends and roll up to seal. Spoon passata sauce into backing dish and top with enchiladas. Dot with sour cream and sprinkle with grated cheese and sliced chilli.
Step 6
Oven cook at 200C/180C fan for 30 minutes.

Cook rice
