Spicy Rice Noodles with Bok Choy

Filling dish when your craving brothless spicy noodles. I used rice noodles because I am sensitive to gluten but any noodles can be used.

Ingredients
2 servings
5 ozrice noodles
or noodles of choice
3baby bok choy
rough chopped
¼ cupgreen onion
diced and divided
¼ cupcilantro
2 Tablespoonssesame seeds
toasted
Dressing
Instructions
Step 1
Toast sesame seeds in dry pan. Pour sesame seeds into ramekin and set aside to cool.
Step 2
Fill same 2q pot with water. Boil and add noodles, bok choy, and half of green onion. Boil till vegetables are crisp tender and noodles are done. Drain.
Step 3
While noodle/veg is in strainer use same pot to make the dressing. Bring to boil for one minute.
Step 4
Toss the dressing with the noodles. Garnish the noodles with sesame seeds and the chopped cilantro. Lightly toss again and enjoy!
