Stir-Fried Chicken with Holy Basil
This dish is made with a special type of basil (hot basil or holy basil) that is not often found overseas. It’s usually prepared spicy, with green beans, onions and minced chicken or pork. Pad kra proaw is a staple served up by street food vendors and local restaurants all across Thailand.

Instructions
Step 1
Heat the oil over high heat. When hot, add the garlic and chilies and cook until fragrant.
Step 2
Add the chicken and cook for 1-2 minutes. Add water.
Step 3
Add all the vegetables and cook for about 2-3 minutes, until the beans are tender. Add the holy basil.
Step 4
Add a pinch of black pepper, followed by the soy sauce, starting with 1 teaspoon and adding a little bit more if needed. Turn off the heat.
Tip
Step 5
If the food is too salty, too spicy, or too sour add a little bit of sugar to neutralize the flavor. But if the flavor is already perfect, there’s no need to add sugar.
