Instructions
Step 1
Cook the sausage in a large nonstick skillet over medium heat, stirring occasionally, until lightly browned, 5 to 7 minutes. Drain off any excess fat.
Step 2
Meanwhile, in a 5- or 6-quart electric slow cooker, combine the celery, onion, bell pepper, zucchini, 2 tablespoons of the parsley, the garlic, tomatoes with their juices, broth, beans, salt, black pepper, and cayenne. Add the sausage pieces and stir to distrib- ute them evenly.
Step 3
Cover and cook on the low heat setting for 8 to 9 hours. Serve garnished with a sprinkling of the remaining parsley.
