Instructions
Step 1
First start prepping for the sauce. Cut a small shallow cross (+) on the bottom of the celebrity tomatoes and boil it in a saucepan for 6 minutes. Peel the tomato skin, and crush them.


Step 2
Roast the red pepper on the stove until the skin burns, then peel the burned skin and chop the pepper.

Step 3
In a pot, add 2 tbsp of olive oil, chopped onions, celery, garlic cloves, and stir until its translucent. Add the boiled tomatoes, roasted red peppers, and rest of the sauce ingredients except the fresh herbs. Boil the sauce mixture for 10 minutes over medium flame. Take the bay leaf out, add the fresh basil, and thyme. Blend the sauce into a smooth puree with a hand blender.


Step 4
Cut all the vegetables (zucchini, yellow squash, eggplant, and roman tomato) into 1mm round.
Step 5
In a baking tray or a 15 inch cast iron skillet, add the sauce upto an inch. Arrange the sliced vegetables on the sauce in a circular pattern. Add vegetables standing upright (add Yellow squash, zucchini,eggplant, and tomato slices), continue with the pattern until the pan is filled.

Step 6
Mix all the ingredients for the herb oil and brush it on top of the vegetables.

Step 7
Cut a parchment paper round to the size of the pan and cover the Ratatouille with it.

Step 8
Preheat the oven to 375F

Step 9
Baked the Ratatouille in the oven for 35-45minitues.

Step 10
Serve the Ratatouille with some extra sauce, garnish with fresh basil, and enjoy!
