Step 1
Pre heat oven 160c
Step 2
In a heavy based overnight proof pan heat the olive oil. Fry the onions on low heat for 20 mins stirring regularly
Step 3
Add fresh ginger and garlic to the pan. Continue to fry on low heat for 5 mins.
Step 4
Add diced mutton and cook till meat is browned
Step 5
Mix together yoghurt, garam masala, cumin, coriander, tuneric and ground ginger and chilli powder. Add this paste to the pan and cook for a further 3 mins.
Step 6
Add pasaata to pan and stir through. Transfer to oven and cook for 3 hours. Stirring every hour.
