Place ricotta in a cheese cloth or coffee filter then place that in a strainer over a bowl. Place some thing heavy on top and refrigerate for one hour to remove excess liquid. To make your cannoli shells microwave pizelle cookies one at a time for 40 seconds and shape them into a cannoli shape immediately. This must be done quickly so one at a time is essential! In a large bowl combine strained ricotta, Cool Whip, orange zest, vanilla, and powdered sugar. Spoon or pipe ricotta filling into cannoli shells. Place chocolate chips or pistachio on the ends and enjoy.
