Comfort beef and oxtail stew
This recipe was designed to use home made or a little higher quality beef stock than what comes in a box. If that’s all that’s accessible use the unsalted variety and add a few tablespoons of flour when sautéing your vegetables

Instructions
Step 1
Begin by seasoning beef with salt and pepper
Step 2
Brown all sides of oxtails and chuck adding oil as needed. Set aside keeping separate
Step 3
In the same pan add diced onion and sauté for 2 minutes. Add minced garlic and continue to sauté until onions and garlic are translucent around 2 more minutes. Add tomato paste and cook an additional minute
Step 4
Deglaze with red wine, add thyme, and scrape the bottom with a rubber spatula to release any fond. Cook until red wine has reduced into a shiny syrup.
Step 5
Add beef stock and bring to a simmer.
Step 6
Add oxtails, simmer gently for 30 minutes.
Step 7
Add chuck and simmer for 1 1/2 hours
Step 8
When the time is up add potatoes and sliced carrots. Simmer for 15 minutes. Add pearl onions and simmer an additional 15 minutes
Step 9
Adjust seasoning with salt, pepper
