Cheesy bean & sweetcorn cakes with salsa

Instructions

Step 1
Put the beans and chickpeas in the bowl of a food processor and blend un smooth.
Step 2
Tip into a bowl and add the cheese, sweetcorn, jalapeños, egg and half the coriander.
Step 3
Season, mix well to combine, then shape into eight patties
Step 4
Heat the oil in a large frying pan and cook the patties for 4 minutes on each side - you may have to do this in batches.
Step 5
Keep them warm in the oven as you go.
Step 6
Mix the tomatoes, onion, remaining coriander and lime juice with a little salt to make a salsa.
Step 7
Serve the cakes with the salsa and some salad leaves, if you like.
