Pepperoni Pizza Bundt Cake

Instructions

The Dough

Step 1
Mix the water with yeast and sugar and let sit for 10 minutes
Step 2
Combine the flour salt and oil, tip in the yeast mixture, combine to a dough and knead for 10 minutes
Step 3
Lay in an oiled bowl or tray and let sit for an hour at ambient temp or in the fridge overnight

The Bundt Cake

Preheat an oven to 200C

Melt the butter and add crushed garlic, chopped coriander, salt and pepper
Step 6
Get the dough out and cut up into small 1/2 inch doughballs
Step 7
Add the pizza sauce and garlic butter to a large mixing bowl and drop in the Doughballs making sure they have a coating of sauce on all sides

Set 6-8 pieces of pepperoni aside and chop the rest into quarters and chop the mozzarella into small cubes
Step 9
Mix the chopped pepperoni and cheese into the dough-balls
Step 10
Lay some whole pieces of pepperoni into the bottom of the Bundt cake tin and tip the dough-balls on top
Step 11
Cover with cling film, and rise in a proving tray/ warm spot for 1-2 hours
Step 12
Bake at 200C for 20 minutes til brown and bounces back

The Garlic Herb Mayo

For the sauce, add the salt, pepper, herbs, parsley into a bowl, then crush the garlic in and juice the lemon and stir to combine

Let sit for a few minutes for the acid to work it’s magic on the flavours then squeeze in the mayo and stir to combine

Tip out the pizza bundt cake and enjoy!
