Spiced Salmon with tray baked Sag Aloo

Instructions

Step 1
Pre-heat the oven to 200c/180c fan/gas 6 and fill a large pan with water, add a pinch of salt and bring to boil
Step 2
Chop potatoes into 2cm chunks. Cut lemon into wedges.
Step 3
Add the potatoes to the pan of boiling water and simmer for 6 mins.
Step 4
Drain potatoes and put to one side to steam dry for a few mins.
Step 5
Add olive oil, turmeric, ground cumin and chilli flakes to a roasting tin.
Step 6
Toss the potatoes in the roasting tin and season to taste.
Step 7
Roast in the oven for 20 mins, tossing halfway through. Boil the kettle.
Step 8
Put the spinach in a colander and pour over boiling water until wilted.
Step 9
Use the back of a wooden spoon to squeeze out excess water.
Step 10
Generously, rub salmon with the spice paste and drizzle with olive oil.
Step 11
Add spinach to the roasting tin and stir through the potatoes. Top with salmon skin side down.
Step 12
Increase the heat to 220c/200c fan/gas 7. Return to the oven for 20-25 mins or until the salmon is just cooked.
Step 13
Remove the salmon to a side plate and stir cream into the potatoes.
Step 14
Replace the salmon and serve with lemon wedges.
