Instructions
Step 1
1. Medium heat. Dice and sauté onion in olive oil until translucent. Add pepper and a bunch of salt. Idk how much, just shake it in there good

2. Drain green chilies and add them along with jalapeño - I use the jarred kind and I just add a couple of spoonfuls? I added two-ish tablespoons to my last batch, it could have used 3-4 for more kick

3. Add minced garlic or garlic paste. Again I use the jarred kind because who gives a fuck - just throw a couple of spoonfuls in there, you measure that with your heart - cook it for just a minute because it’ll burn.

4. Throw in your seasoning packet and stir, let that toast and mix with the other stuff for 30 seconds then stir in most of the chicken broth. If you wanted to be really authentic you’d make your own seasoning with cumin and chili powered but McCormick already figured that shit out so why bother

5. Drain and rinse the beans and corn, throw into pot.
Step 6
6. Use a spoon to get back out about a cup of beans etc, throw them into the food processor and purée. Add back to pot to thicken. Decide it still looks thin and do another cup.
Step 7
7. Bring mixture to a boil then turn heat to low, cover and simmer for a while. Idk how long, doesn’t matter really. More is better because it’ll reduce but honestly you could throw all this shit into the crockpot raw and it would come out pretty good, so you can choose your level of commitment. (You can thicken it with a teaspoon of cornstarch too. Don’t just throw it in like a Neanderthal, take a measuring cup and make a little slurry* with hot water and add it to the pot. *I don’t have time to explain a slurry Google it. )
Step 8
8. If eating right away, skip to step 9. If not eating immediately, pour into crockpot and put entire crockpot into fridge. Next day turn crockpot on and let the soup heat up before you add the roast chicken.
Step 9
9. Pull all the meat off your rested roast chicken. You will need to do this with your hands. There is no other way. If your bird is not rested you will burn the crap out of your fingers. You have been warned. Chop it up and stir it in.
Step 10
10. Chop cilantro and cut limes into tiny wedges. Do not slice them crossways, they’ll look cute but you won’t be able to squeeze them. You must do wedges.
Step 11
11. Serve with cheese, tortilla chips, avocado, and sour cream if you want (use more jalapeños if adding sour cream). Squeeze in your lime wedge and top with a little cilantro. Lime and cilantro are key! Don’t skip unless you’re one of those people who think cilantro tastes like soap.
