Instructions
Step 1
Roast or boil the sweet potato until soft.
Step 2
Mash sweet potato and then mix with plain flour until it forms into a dough
Step 3
Roll out the dough into a sausage like shape and then cut thumb width apart.
Step 4
Boil the gnocchi sweet potato pieces until they float then scoop out and set aside.
Step 5
In a pan fry the minced or chopped up garlic and red chilli with the oil, add mushrooms and courgette then the gnocchi pieces.
Step 6
Add spinach, cook until.wilted and serve.
