Step 1
Preheat the oven to 200C (fan)
Step 2
Slice the aubergines lengthwise. Prepare 2 baking trays, lined with parchment. Arrange sliced aubergine in a single layer on the baking trays. Brush them with olive oil ( safe 1 tbsp for meat) and sprinkle with salt and pepper. Roast in the oven for 20-25 minutes, or until golden.
Step 3
Meanwhile, cook the meat: In a large skillet heat olive oil, add the onion and sauté for 2 minutes, then add the meat, salt, pepper, cinnamon and ground nutmeg and cook until meat is ready, stirring frequently and breaking it up as it cooks.
Step 4
Assemble aubergine slices on the bottom of an ovenproof dish. Layer each slice, so it extends half in the baking dish and half out. Then add the meat and fold the aubergine slices over the meat. If any slices are left, add them on top.
Step 5
Top the casserole with tomato sauce and evenly distribute.
Step 6
Bake at 200C (fan) for 35-40 minutes.
Step 7
Remove from heat, garnish with coriander, and let it sit for another 5 minutes before serving.
Step 8
Serve with flatbread, potato or rice and enjoy!
