1chili pepper
1garlic clove
1red onion
2 cmginger
2 cmturmeric root
1leek
3gcoriander
2 teaspoonsmustard grains
40gtomato paste
170glong grain rice
250mlcoconut milk
1can corn
80ggreek yoghurt
1 tablespoonsunflower oil
0.5vegetable cube

Instructions
Step 1
Cook the rice in a pot of water
Step 2
Finely chop the red pepper, garlic and onion
Step 3
Mash the ginger and turmeric
Step 4
Chop the leek in fine half-moons
Step 5
Coarsely chop the coriander
Step 6
Heat the sunflower oil in a pan over medium heat
Step 7
Add the leek, ginger, turmeric, mustard grains, onion, garlic, chilli paper to the pan. Cook for 2 minutes while mixing constantly

Add the leek and the tomato paste. Cook for 4-6 minutes until leeks ar soft.
Step 9
Add the coconut milk to the pan
Step 10
Add the vegetable cube and the the corn to the pan.

Cover and cook for 12 minutes

Add salt and pepper to taste
The sauce + naans

Preheat oven to 200 C

Wet the naans and put them in the oven for 2-3 minutes

Mix the yoghurt with the coriander
Serving
Step 16
Serve the curry with rice on the side
