Ingredients

1sweet potato
medium, peeled + chopped
1broccoli crown
large, cut into florets
1 cupwhite onion
diced
1 x 15 ozcan chickpeas
organic, drained and rinsed
1 x 28 ozcan diced tomatoes
2 x 14.5 ozcans coconut milk
either full fat or lite
¼ cupquinoa
2garlic cloves
minced
1 tablespoonginger
freshly grated
1 tablespoonturmeric
freshly grated
2 teaspoontamari sauce
wheat free
1 teaspoonmiso
or additional tamari
½ teaspoonchili flakes
Instructions
Step 1
Add all ingredients to a slow cooker. Stir until everything is fully incorporated.
Step 2
Turn the slow cooker to high and cook for 3 - 4 hours until sweet potato cooks through and the curry has thickened.
