Easy Chicken Curry

Diana says, "This recipe is adapted from my friend Kathy's stash. She is a wonderful cook and a warm, inviting hostess. We grew up together in Baltimore, and she loved cooking for all of us when we'd go to her house after school on on the weekends. Even as a teenager, she would set out homemade cookies or pie, or make us a delicious sandwich. We'd settle in at her parents' big kitchen table with tasty treats and start in on the even-more-delicious conversation! And that's what we really came for-the conversation and the friendship. We loved hanging out there. Kathy lives in New Zealand with her husband, where they have raised four lovely children (and lots of cows!). She continues to show gracious hospitality to everyone who stops by their farm."

Instructions

Step 1
Melt the butter in a pot or deep skillet over medium heat.
Step 2
Saute onions and apples or potatoes until soft.
Step 3
Stir in flour until a paste forms.
Step 4
Stir in lemon juice, curry powder, and brown sugar.
Step 5
Stir in chicken broth and bring to a rapid boil.
Step 6
Then add the chicken pieces and stir, reduce heat and simmer 10 minutes, until chicken is cooked all the way through. Keep stirring to break up any clumps of chicken pieces.
Step 7
Serve over steamed rice or couscous!
