Ingredients
4 servings
1 cupplain nonfat greek yogurt
1 Tbspcilantro
chopped
2 Tbspminced garlic
1 tsplemon juice
1 x 15 ozchickpeas
can, rinse & drained
1 x 14 ozartichoke hearts
can, rinse and drained, coarsely chopped
1cucumber
medium, sliced thin
½ cupcarrot
shredded
½ cupgreen onion
chopped
4whole wheat pita pockets
cut in half
salt
to taste
pepper
to taste
Instructions
Step 1
Combine yogurt, cilantro, garlic & lemon juice in a small bowl. Mix well, add salt & pepper to taste.
Step 2
Combine chickpeas, artichoke hearts, cucumbers, carrots and green onion, in large bowl. Stir in yogurt mixture, and mix until well blended.
Step 3
Divide cucumber mixture among pita halves.
