These peppers have a smooth bright red skin with three to four lobes and a hollow inside. They are native to Central and South America, but today China is the largest producer of red capsicums. Red, orange, yellow, green—what’s the difference between the different colored capsicums? Not as much as you might think! All capsicums, regardless of their color, begin as green. Green capsicums, or green bell peppers, are unripe capsisums that have a slightly bitter taste. As they grow, green capsicums turn yellow, then orange, and finally red. As their color changes, they become sweeter. That’s why red capsicums have the sweetest flavor. Aside from color, capsicums also differ in terms of health benefits. Although all capsicums are low calorie, red capsicums are particularly high in vitamin C (even more than an orange!) and antioxidants. One medium-sized red bell pepper contains more than the daily recommended amount of vitamin C and 1.5 times more than a green capsicum. Vitamin C is an essential nutrient that supports the immune system, aids collagen production, and helps with the absorption of iron and folate. While all capsicums are healthy vegetables, the mature red capsicum may just be the healthiest of them all. Red capsicums should be stored in the refrigerator for about 1-2 weeks. They can also be kept in the freezer, either whole or cut, for up to 10 months. When you’re ready to use them, red capsicums can be enjoyed raw or cooked—throw them in a salad, add them to stir fry, stuff them with rice and meat, or saute them to make a delicious dish of peppers and onions.
