Step 1
Preheat the oven to 200°C (392°F). Cut the sweet potatoes into 1cm thick slices. Place them on baking paper, drizzle with olive oil and a pinch of salt.

Bake the sweet potato slices for 30 minutes, turning them halfway through to ensure even cooking.
Step 3
While the sweet potatoes are baking, prepare the avocado dip. Add the avocado, chickpeas, lemon juice, garlic, salt, cumin, and tahini to a food processor. Process the mixture until it becomes smooth.
Step 4
In a separate bowl, combine the diced cherry tomatoes, finely chopped red onions, and olive oil.
Step 5
Once the sweet potato slices are done, top them with the smooth avocado hummus, followed by the tomato and onion mixture. Sprinkle with chopped parsley and chilli flakes. Serve and enjoy your Avocado Hummus on Sweet Potato Toast.
