Indian Style Creamed Spinach

Creo que lo licué demasiado porque literal, ya no se veían los pedazos de la espinaca, todo era un verde homogéneo jajaja se veía un poco asqueroso pero el sabor era delicioso! Así que la apariencia es lo de menos.

Delicious! Added more spinach cause I picked all I had (so about 370gr) but I always add more spinach than the recipes require cause it makes it better. Will absolutely make this again! Maybe I'll add some paneer next time, but it does well on its own with basmatirice, mango chutney and naan.

I added store-bought paneer and used less coconut milk and water. Was fantastic.

Increase spinach to 16 oz. Squeeze out water after blanching. Was a little soupy. Omit water. Great flavor.

Came out soupier than I hoped but that was my bad - I subbed half a can of chopped tomatoes with juice ‐ I think it was too much moisture with the addition of the 1/4c water. That said,, flavor was good and I would give it another go. Other tweaks include using ghee instead of olive oil and added tofu.

Used the Ninja blender. Looks good!
