Canoas de Platanos Maduros (Sweet Plantain Canoes)

It seems like a really odd combo of things but it is delicious! It is sweet and briny. The hardest part is finding ripe plantains or waiting for green ones ro fully ripen. There is always leftover filling but it freezes well for the next batch. It's not quick or simple, but it's worth the effort.
