Instructions

Step 1
Before making the salmon, start cooking your rice in a rice cooker or on the stovetop according to the instructions on the package or for the rice cooker.
Step 2
In a large frying pan over medium heat, add canola oil. Once hot, add your salmon filets, skin side down. Once one side is browned and crispy, flip over.
Step 3
In a small bowl, combine the warm water and sugar and whisk together. Add the soy sauce, ground ginger and garlic and whisk together. Then, add the homemade teriyaki sauce to the skillet.
Step 4
Continue to cook until the sauce begins to thicken and sticks to the back of the spoon. Use a spoon to coat the salmon filets with the sauce. Flip and filets and coat the other side with the sauce.
Step 5
Remove the salmon from the skillet and pour the remaining sauce on top of the salmon.
Step 6
Then, prepare your pickled cucumber. Use a mandolin or a sharp knife to cut your cucumber into thin slices. Transfer to a bowl and add the rice vinegar, sugar and salt. Gently mix together and top with sesame seeds.
Step 7
Once your rice is complete, prepare your bowl. Start with a large scoop of rice, add your teriyaki salmon and your cucumber. You can serve the pickled cucumber in a separate bowl if desired.
Step 8
Top with green onions and sesame seeds and enjoy.
