So easy, delicious and ideal for lunch boxes or feeding a crowd! I used vegan pesto, replaced one of the bell peppers with a pack of fresh cherry tomatoes, and added a generous amount of sun-dried tomatoes too. I didn't use any parmesan (just didn't feel like it), and used dried mixed herbs instead of fresh basil as I forgot to buy that. The pesto added the perfect amount of heat for our taste, but if you have kids or don't like spicy food then you may want to reduce the amount of red pesto and maybe sub with some green pesto or hummus. I also crumbled up a block of firm tofu into the salad (so it looked like feta pieces), which added a wee bit of protein and a bit of texture variation. Will definitely make this again; I can see it working beautifully for a picnic or potluck.
