3 cupswater
to cook dal

¾ cupwater
hot, use only if required to adjust the consistency

1 ½ tablespoonoil

½ teaspooncumin seeds
jeera

1 teaspoongarlic
cloves, fine chopped

1 teaspoonginger
peeled & fine chopped

⅓ cuponion
medium, fine chopped

1green chilli
chopped, optional

1 cuptomatoes
medium, deseeded, fine chopped

¼ teaspoonturmeric

½ teaspoonred chilli powder

½ teaspoongaram masala

1 teaspoonsalt
more to adjust

1 tablespoonkasuri methi
dried fenugreek leaves

1 tablespooncoriander leaves
fine chopped, more for garnish

1lemon
medium, to serve, or use 1 tsp amchur - dried mango powder

2 tablespoonsghee
oil for a vegan dish

½ teaspooncumin seeds

2dried red chilies

½ tablespoongarlic
fine chopped, I use 1 tbsp

⅛ teaspoonhing
asafoetida, or gluten-free hing

⅓ teaspoonred chilli powder

¼ teaspoonmustard seeds
