Creamy White Bean Chicken Enchilada Soup

Always a crowd pleaser

Real tasty soup that eats like a meal. I only had one can of white beans so I used half white and half black which made it appear darker than the recipe. It was my first attempt at a healthy home cooked meal in some time and took some effort, but came out great!

Absolutely perfect! I really appreciated the use of pureed beans to add creaminess instead of sour cream or cream cheese. The addition of turmeric to enhance the color was genius.

Delicious soup. I didn't have turmeric. I improvised and cooked one pound of white navy beans in chicken stock, then added the veggies. I put one can of enchilada sauce and used diced jalapeños to taste. I also added one can of coconut milk to make it creamy. It made plenty of leftovers. I plan to add avocado slices next time I have it. Excellent and delicious! Thx for recipe. A good meal on a cold winter day.

I added garbanzo & black beans as well. Super hardy!! Tastes even better the next day
