Ingredients: Sunflower oil, to shallow-fry; 12 wonton wrappers (from selected supermarkets and Asian food shops); 500g skinless sashimi-grade hiramasa kingfish, pin-boned, chopped into 1cm pieces; 100g carrot, peeled, shredded; 100g daikon, peeled, shredded; 100g taro (from good grocers and Asian food shops), peeled, shredded; 100g Lebanese cucumber, shredded; 50g pickled ginger; 1 pomelo, peeled, segmented; 1 lime, peeled, thinly sliced; 1 dragonfruit, peeled, chopped; 1 Granny Smith apple, shredded; 1/3 cup (50g) salted peanuts, chopped; 3 long green shallots, shredded; Toasted white sesame seeds; Coriander sprigs; Chinese five spice powder; Freshly ground white pepper; 200ml plum sauce; 50ml light soy sauce; 1/4 cup (60ml) sesame oil

Instructions
