fresh, or other spicy, casings removed and crumbled

0.5 poundsmoked sausage
such as linguica or kielbasa, sliced into rounds

thick, cut into small pieces

1smoked ham hock

4bay leaves

water

1 tablespoonbeef bouillon base

½ teaspoonblack pepper

salt
to taste
