Step 1
Preheat oven to 350 degrees and cook Gorton’s according to package.
Step 2
While the shrimp is baking, prepare the ingredients: dice the red & green bell peppers and onions, and chop the cilantro.
Step 3
Cut the avocados in half and remove the pit. Scoop out some of the avocado around the hole from the pit, leaving a thinner layer of avocado in the shell. Mash the avocado that was scooped out.
Step 4
Squeeze half of the lime on the avocado in the shells to prevent it from browning.
Step 5
When the shrimp is done, carefully remove from the package and drain, reserving one teaspoon of the sauce it was cooked in.
Step 6
Cut shrimp into smaller pieces, about 3 cuts per shrimp. Reserve 4 shrimp whole for garnish if desired.
Step 7
Mix together shrimp, mashed avocado, red and green bell peppers, red onion, cilantro, and 1 teaspoon of reserved sauce. Squeeze in half a lime and stir.
Step 8
Scoop the mixture into the avocado shells and enjoy!
