I replaced the chicken stock with pineapple juice and Asian stock powder. Left out the vinegar. Added a bit of kung pao sauce mix and a squirt of sriracha. Served with udon noodles

Was good but definitely need to up the seasonings. I also doubled up the sauce. Will make again but will season more.

Not quite sweet and sour enough. A bit more sugar and vinegar.
