Ingredients
4 servings

1 Tbsolive oil

0.5red onion
chopped

3 clovesgarlic
chopped

1carrot
small, chopped

2 ribscelery
chopped

1red potato
diced

1 tspmarjoram

1 tspcrushed rosemary

1 tspparsley

1 Tbsoregano

1 Tbscelery leaves
chopped

crushed red pepper
to taste

1can diced tomatoes
chopped, no salt added

4 cupsVegetable broth
no salt added

2bay leaves

2 cupfrozen vegetables
peas, corn, green beans
Instructions
Step 1
In a pot or dutch oven, heat up an olive oil, and add the chopped onion and garlic. Saute until soft, the add carrots and celery. Cook for 3 to 5 minutes, and add diced potatoes. Saute for 1 to 2 minutes. Then season.
Step 2
After combining the seasonings, pour in diced tomatoes, the vegetable broth and add the bay leaves. Bring to a boil, and simmer for 15 minutes.
Step 3
To finish off the soup, add in the frozen vegetables, cook until soft.

I love soup and this one is awesome. I put mushrooms and some leftover cabbage in it and skipped the carrot, as I didn't have any. I also put more water in it to accommodate for the amount of veggies. Very filling yet light soup, the spices work great together and the tomatoes give some nice acidity to the soup
