1 packageextra firm tofu
drained and squeezed most moisture out

2 clovesgarlic

0.5yellow onion

0.5 packettaco seasoning

1mango

1avocado

1limes

0.25red onion

cherry tomatoes

1fresh jalapeño
optional, take out seeds and white part if you don’t want it spicy

red wine vinegar

rice

fresh cilantro

Instructions
Step 1
add some olive oil to a pan. saute the onions and garlic for a minute. add in the tofu and break it up. add salt, pepper, red paper flakes. add in half of the taco seasoning packet. cook for 10 ish minutes, i like to get mine crispy
Step 2
While the tofu is cooking, chop mango, avocado, tomatoes, red onion, cilantro, and jalapeño for the pico de gallo. Mix all together with lime juice, red wine vinegar, and salt.
Step 3
sautée the garlic in olive oil until fragrant. add the cooked rice. then add the fresh cilantro and lime juice. and some salt.
Step 4
top with shredded cheese bc cheese is life
