Step 1
Start by cutting the tortillas in triangles. In a pan, add enough oil to cover about ½ inch and heat it up. Fry the tortillas until golden brown and set aside on a paper towel, sprinkled with some salt
Step 2
Roughly chop all the vegetables and aromatics. Char them in the same pan (but with less oil) until starting to brown. Take out of the pan and blend together with the oregano, cumin, black pepper and veggie stock
Step 3
With a sieve, filter the blended mixture into a pan on medium heat and boil it down for 5 minutes on medium heat. Add the tortillas to it to quickly coat them with the sauce
Step 4
Serve them with a generous sprinkle of queso fresco, sliced avocado, two fried eggs, red onion and cilantro
