Ingredients
1 servings
1 cupquinoa
2 cupswater
1 tablespoonghee
or vegetable oil
1 teaspooncumin seeds
1onion
small, finely chopped
2cloves garlic
minced
1 inchginger
piece, grated
1green chili
finely chopped, optional
1 cupmixed vegetables
carrots, peas, beans, bell peppers, etc, chopped
1 teaspoonturmeric powder
1 teaspoongaram masala
salt
to taste
Fresh coriander leaves
chopped, for garnish
Instructions
Step 1
Rinse the quinoa thoroughly under running water to remove any bitterness.
Step 2
In a saucepan, add the rinsed quinoa and 2 cups of water. Bring it to a boil, then reduce the heat to low, cover, and let it cook for about 15 minutes or until the quinoa is cooked and the water is absorbed. Fluff it with a fork and set aside.
Step 3
Heat ghee or oil in a separate large pan over medium heat.
Step 4
Add the cumin seeds and let them splutter.
Step 5
Add the chopped onions and sauté until they turn translucent.
Step 6
Add the minced garlic, grated ginger, and green chili (if using). Sauté for another minute.
Step 7
Add the mixed vegetables, turmeric powder, garam masala, and salt. Stir well to combine.
Step 8
Cover the pan and cook for about 5-7 minutes or until the vegetables are tender.
Step 9
Add the cooked quinoa to the pan and mix everything together gently. Cook for another 2-3 minutes to let the flavors blend.
Step 10
Remove from heat and garnish with freshly chopped coriander leaves.
Step 11
Serve the quinoa vegetable pulao hot with raita (yogurt sauce) or any curry of your choice
