Make 4 servings
Step 2
Toast bread slices. I heated butter in a cast iron skillet and toasted each side of the bread until desired crispness. A toaster or toaster over works well too.
Step 3
In small bowl, mash the diced avocado and 1 cup marinated artichoke hearts with a fork or potato masher.
Step 4
Slice the 2 Roma tomatoes and cut each slice in half.
Step 5
Spread desired amount of the avocado-artichoke mixture onto each slice of bread.
Step 6
Top with sliced Roma tomatoes and seasonings to taste. Enjoy!
