Instructions

Step 1
In a medium soup pot, bring the chicken stock to a simmer.

Prepare a mixture of cornstarch and water, ensuring it is well-mixed as cornstarch settles quickly.

Continuously stir the soup while gradually adding the cornstarch and water mixture to avoid clumps. Adjust the amount of starch based on the desired thickness of the soup. You can add it all at once or in small batches, allowing the soup to simmer for a few minutes before checking the consistency.

Lightly beat the egg before adding it to the soup for white and yellow swirls. Now it's time to add the beaten egg. Use a ladle to stir the soup in a circular motion while slowly drizzling in the beaten egg.
